Mini Cheesecakes

18-24 individual cheesecakes

Ingredients

2 8-oz cream cheese packages
1/2 c sugar
1 t vanilla
2 eggs
vanilla wafers
fruit topping

Method

Mix the first 4 ingredients. Place a vanilla wafer in the bottom of each cupcake cup. Fill the cups between 1/2 and 2/3 full. Bake at 325° for 25 minutes. Top with your favorite fruit.

Notes

Cherry pie filling makes a yummy topping.
